Indigo almond flour is blanched - compared to unbleached flour, it's finer, smoother, and is fluffier. Blanched means that the almond skin has been removed from the nut by boiling. It has almost the same nutritional profile as unbleached almond flour while being finer, lighter, and better to use for pastries.
