
"True Cinnamon" is the Ceylon Cinnamon grown in Sri Lanka, while Cassia (Chinese Cinnamon) is the most commonly available "Cinnamon" in most stores. Ceylon Cinnamon also has a more refined taste than Cassia. Health-wise, Ceylon Cinnamon contains only a negligible amount of coumarin (a naturally occurring chemical that is harmful with prolonged intake). Cassia contains about 25x more.
